Dim Sum Sunday - South of the Border

For this week's Dim Sum Sunday - South of the Border, we decided to go to our favorite Mexican restaurant Casa Tina's.

It's a cool, kid friendly place to eat, with lots of food to choose from.

I ordered the Mole Poblano, which is my favorite.

A yummy combination of chocolate and chilies. Slightly sweet with just a little bit of spice.
My feel good comfort food.

Arroz Cabezon

Hubs went with the Arroz Cabezon. A mix of pork and chicken in pibil sauce, with guacamole and pickled red onions on the side.

Love the artwork!

Thanks again Shamu for hosting another fun Dim Sum Sunday!

Dim Sum Sunday- How does your garden grow?

My friend Shamu hosts a food meme on Sundays called, Dim Sum Sunday. The idea is to use the weekly theme when coming up with Sunday's dinner recipe. It doesn't have to be yours, and you don't even have to cook it yourself! It just needs to fit the weekly theme. And this week's is, How Does Your Garden Grow?

Since our garden is growing well, we've had a bounty of tomatoes and zucchini (not to mention, more eggs than we know what to do with) that were just begging to be cooked. A quick search and we found this recipe for a easy zucchini, tomato, and cheese tart to use for our Sunday dinner.

Yummy, Yummy, Yummy!

Thanks Shamu for inviting me to join in the fun!

Pastels and a Poem

Those who contemplate the beauty of the earth find reserves of strength that will endure as long as life lasts.

There is a symbolic as well as actual beauty in the migration of the birds, the ebb and flow of the tides, the folded bud ready for the spring.

There is something infinitely healing in the repeated refrains of nature - the assurance that dawn comes after night, and spring after the winter.

The lasting pleasures of contact with the natural world...are available to anyone who will place himself under the influence of earth, sea, and sky and their amazing life.
