African Violets: my use to croak too, until I finally listened to how NOT to take care of them. Put them in a bright window in an African Violet pot, NOT a regular pot, only water from the bottom, NOT from the top, pinch the yellowing leaves from the bottom, NOT the top and leave them alone. They prefer water that has been left out on the counter for a few days, NOT right out of the tap.

Besides tossing Bok Choy into any number of stir fry meat dishes, we like to just stir fry it in sesame oil as a green side dish.
