After taking a few weeks off, we're back with this week's theme of Summer Soups.
I had a tough time last week trying to find a recipe that I liked, but luckily after a whole lot of whining and searching, I found this recipe for Lime Soup with Tortilla Strips and Chicken.
Maybe not quite what you would expect when you think of summer soups, but it is 90 some degrees outside and it is a soup, so technically.....;)
It really was a great soup that I'll definitely make again. Very light and tasty. Perfect for a summer day.

I don't think there's any law that says you can't have a hot soup in the summer. Lime is always refreshing. A dollop of sour cream or guacamole would cool it down a little.

Buzz is right, SCREW the RULES!! As long as it tastes good. It certainly looks good. What did the rest of the family think or were they just happy the whining had ended? Don't you have guests?
By the way, that tablecloth ROCKS!!
Love that table cloth! It reminds me of the Day of the Dead festivities in Mexico: lots of skeletons.
Buzz Kill, the lime was great in this! I wish I would have thought of some sour cream or guacamole like you suggested. Sounds yummy.
Shamu, Hubs and I loved it, but Elizabeth not so much. She opted for a sandwich. :)
This Thursday is when everyone starts coming in. So hopefully we'll have everything done. I've had John painting for for the last week. Poor guy is beat!
The fabric is an Alexander Henry print that I picked up at FabricWorm.com. I spend waaaay to much money there!
When the house quiets down some, I might have to whip you up a little somethin' with it. :)
SnB, they have a couple different ones in their fabric line and they're all very cool! The red was my favorite though. Made myself a couple market bags from it.
I see that we made no children happy in this week's Dim Sum Sunday.
Shamu, we were very surprised that she didn't like it. She's usually game for anything.
I love your entry too! I think spicy soup is good for hot weather! I likes my soup hot and my beer cold!
I was going to comment on the Day of the Dead fabric. Leave it to the Mexicans to make skulls look festive! haha!
