Grouper Veracruz
4 (6-ounce) grouper fillets (3/4 inch thick)
1 tablespoon olive oil
2 cups chopped onion
1 teaspoon ground cumin
1 garlic clove, minced
1/4 cup water
2 tablespoons chopped fresh cilantro
3 tablespoons fresh orange juice
2 tablespoons chopped pitted green olives
1 tablespoon fresh lime juice
1 tablespoon capers
2 tablespoons tomato paste
1 (10- once) can diced tomatoes and green chiles, undrained
1) Preheat oven to 400 degrees.
2) Place fish in a 13x9- inch baking dish coated with cooking spray.
3) Heat oil in a large nonstick skillet over medium-high heat. Add onion, saute 3 minutes. Add cumin and garlic; saute 1 1/2 minutes. Add water and remaining ingredients; bring to a boil. Reduce heat; simmer 3 minutes or until slighty thick. Pour tomato mixture over fish.
4) Bake at 400 degrees for 20 minutes or until fish flakes easily.

I am SO loving everyone's seafood dishes. This looks so good and healthy and oh so very tropical with both lime and orange juice. I'm also loving the new (?) dish, so pretty.

I've had the dish a few years now. There was another one that went with it, but Ollie broke it last year when he stole the Thanksgiving turkey off the stove.lol

Love your seafood dish, Dani! Reminds me of a fish dish I had in Cozumel with lots of citrus and fresh veg. So much lighter, and different in flavor, from what Americans in the north are accustomed to as "Mexican food." Happy DSS!
Wow ! I'm trying this dish for sure. We don't get grouper much 'round here but I'm sure it would be delicious with cod (or some other firm thick white fillet).

I don't do well with a recipe that includes a multitude of ingredients and lots of instruction. That sounds wonderful but someone else is going to have to fix it and serve me.
Oh to have a family that eats fish. I don't think I've ever had a fish dish with cummin in it though. That sounds interesting and maybe I'll make it for myself some time.
