Dim Sum Sunday ~ Veggies

It's all about veggies for this weeks Dim Sum Sunday.


I decided to go with a soup using the beautiful Redbor and Tuscan Kale from the garden.



Tossed in some other veggies and added some stock. Little ditalini pastas too.

It's was a perfect meal for a chilly Sunday at home with a sick kid. :)

Dim Sum Sunday ~ Healthy Eating

Grouper Veracruz


4 (6-ounce) grouper fillets (3/4 inch thick)
1 tablespoon olive oil
2 cups chopped onion
1 teaspoon ground cumin
1 garlic clove, minced
1/4 cup water
2 tablespoons chopped fresh cilantro
3 tablespoons fresh orange juice
2 tablespoons chopped pitted green olives
1 tablespoon fresh lime juice
1 tablespoon capers
2 tablespoons tomato paste
1 (10- once) can diced tomatoes and green chiles, undrained


1) Preheat oven to 400 degrees.

2) Place fish in a 13x9- inch baking dish coated with cooking spray.

3) Heat oil in a large nonstick skillet over medium-high heat. Add onion, saute 3 minutes. Add cumin and garlic; saute 1 1/2 minutes. Add water and remaining ingredients; bring to a boil. Reduce heat; simmer 3 minutes or until slighty thick. Pour tomato mixture over fish.

4) Bake at 400 degrees for 20 minutes or until fish flakes easily.

Dim Sum Sunday ~ Kids Choice

Today we turned Elizabeth loose in the kitchen, with an added twist of whatever she cooked, Shamu had to cook too. Great twist Shamy!

Elizabeth's pick was Spaghetti with Sicilian Meatballs.


She started out by chopping up some basil for the sauce.



Adding a little olive oil.



Couple cans of diced tomatoes, and the sauce was ready to simmer on the stove for about an hour.



On to the meatballs...


Grinding up some pepper to add to the milk, egg, breadcrumbs, and sweet sausage.

Mix, mix, mix.


She had a blast rolling out the meatballs!
Which really surprised me, I thought she'd ask either John or me to do this part, but she was in there with both hands.


Way to go Elizabeth!


You made us a fabulous dinner of spaghetti and meatballs.

Dim Sum Sunday ~ Soup

It's hot steamy soup for this week's Dim Sum Sunday.



With a little help in the garden gathering some veggies and herbs, and a bit of slicing and dicing in the kitchen.


We had a nice pot of bubbling yummies to eat. Perfect for another cold day in Florida.

Dim Sum Sunday ~ Citrus

For this week's Dim Sum Sunday, we baked a Three Layer Orange Cake.

Yummy!

Our cake came out good, moist with just a hint of orange, and layered with a tangy orange filling. The cream cheese icing was nice and tart, a good compliment to the cake.

All together, it turned out to be very good. I think if we were to make it again, we'd maybe try a lemon version.

Dim Sum Sunday ~ Snow Days

For this month's Dim Sum Sunday, we have the theme of Snow Days. Now here where I live in Florida, we don't get snow, but it does get cold.

And on those days, nothing tastes better than a bowl of delicious red lentil soup. Perfect with a loaf of crusty french bread and some fresh oregano and parmesan cheese sprinkled on top. You have a great warm your belly kind of meal.

Dim Sum Sunday ~ Thanksgiving ~ Day 1

Since it's Thanksgiving, Shamu decided to run DSS up until Sunday. It gives us a few days of fun to show off all the yummy dishes that we've cooked up.

Dim Sum Sunday ~ Pie

For this week's Dim Sum Sunday theme of pie, we went with a recipe from my new birthday cookbook.

Apple Galette

Maybe not an actual "pie", but it had all the yummy goodness of one.

Golden brown, buttery crust with oozing apple filling

Dim Sum Sunday ~ Making Mole Poblano

For this week's Dim Sum Sunday theme of Chile Peppers, we thought we would cook up some yummy mole sauce.


This was a very time consuming recipe, (definitely not something you should start at 4 in the afternoon, when you decide that the recipe you had picked out, seems lame) with a whole lot of steps and ingredients, but all the work is worth it. The end result is a yummy complex taste. Spicy, but with a underlying sweetness from the chocolate.

Dim Sum Sunday ~ Creepcakes

For this week's Dim Sum Sunday, Shamu wanted us to bring out our favorite hors d'oeuvres, or special Halloween snacks. And for my little girl this means making some creepy cupcakes.


A little icing tint, an assortment of eyeballs, teeth and tongues and you've got yourself a fun time in the kitchen.

This is also a perfect rainy day activity to keep the kids busy.
